預制菜這么火,你吃了嗎?

1994年,李安的經典美食電影《飲食男女》中,女主角家倩出手就是一桌好菜,讓不少人羨慕不已……

In Eat Drink Man Woman, a 1994 dish-themed movie directed by Ang Lee, the heroine Jia Qian was good at cooking. Her dishes lured the audience a lot.

而近30年后,在家出好菜不再那么遙不可期,因為有了預制菜。

Almost three decades later, having a feast at home is no longer so challenging thank to the pre-made dishes.

松鼠魚、鹽焗雞、火鍋……

短短半小時

昆明人徐瑩就準備好一桌家庭聚會的飯菜。

Squirrel-like fish, salted chicken, hot pot... In just half an hour, Kunming housewife Xu Ying rolled out a banquet for her family party.

徐瑩是預制菜的常客。

比起外賣,預制菜帶來了動手烹飪的快樂,

也能在招待親朋好友時顯得更有誠意。

Xu Ying is a regular consumer of the pre-made dishes. "Unlike take-away food, the dishes need some cooking at times, which is a chance to show love to your friends and families," said Xu.

過去,預制菜都是給餐飲商家準備的。

然而疫情當下,

預制菜滿足了人們對“美味+便捷”的需求。

解決了很多年輕人頭疼的做飯問題。

In the past, pre-cooked dishes were for restaurants. However, the on-going Covid has helped popularize the dishes among young guys that are troubled by cooking trivialities.

2022年春節,預制年菜表現亮眼:

Data showed that pre-cooked dishes made a hit in the Spring Festival of 2022.

盒馬的預制年菜同比2021春節增長345%,叮咚買菜2021年的預制菜銷量同比增長300%,越來越多的超市企業開始引入預制菜品類……

Fresh Hema has seen sales of pre-cooked dishes increase by 345% in the Chinese New Year holiday year on year, while Dingdong Maicai said its 2021 sales increased by 300%. More supermarkets are selling pre-cooked dishes.

預制菜日益升溫火爆。

云南多家企業也抓住這個新趨勢,

進行商業模式升級。

Pre-made dishes are gaining popularity, and Yunnan companies are trying to adapt to the new business mode.

茴香熙樓從2020年起,每逢重大節日便推出盆菜、遼參及具有云南特色的破酥包等預制菜,頗受市場歡迎。

From 2020 on, the Classic 1909 canteen in Kunming has rolled out the Yunnan-featured pre-made dishes of Liaoshen, crispy buns and more. They are favored by diners.

他們還采用急速冷凍、真空包裝等技術,保證預制菜的食品安全。

To ensure the food safety, local restaurants began to use rapid freezing, vacuum packaging and other technologies.

家樂福的預制菜也成為居民日常消費的重要組成部分。

The pre-made dishes by Carrefour have also grown to be a bulk in local residents dining structure.

“一小時送達、半天內送達,客戶可以根據自己的用餐需求靈活選擇送餐時間。”

"We can deliver our dishes to the destination within one hour or half a day, according to needs of customers," said a staff of Carrefour.

家樂福還在預制菜菜品的創新上下足了功夫,從最簡單的小炒到佛跳墻,再到健康養生的燉品,滿足消費者不同消費場景的需求。

Carrefour also innovated pre-made dishes, rolling out stir-fry food, stewed dishes and others to woo more consumers.

云品薈電子商務股份有限公司(以下簡稱云品薈)推出的“鵝油草果飯”系列產品上市一個多月后,各地的消費者都紛紛給予了好評。

The Yunpinhui e-commerce company has served the dish "rice with goose oil and amomum tsao-ko" for over a month, winning likes from consumers.

“味道真不錯,我已經多次購買。”

“太好吃了,我在辦公室都囤著好幾份。”

"It’s tasty. I’ve tried many times."

"I’ve had it several times in my office."

除了鵝油草果飯,包裝精美、加工方便的滇味八寶飯、沾益辣子雞等云南特色預制菜也成為了市場上的爆款。

Besides the goose-oil rice, the pre-made Yunnan dishes of 8-element rice, Zhanyi spicy chicken and others have also made sensations in the market. They feature fine packages and dining ease.

問題來了!

云品、云菜如何在預制菜行業里

占得一席之地?

So here comes the question: 

How can the pre-made Yunnan dishes really survive the competition?

云品薈常務副總經理曹雷認為,相關生產企業需要牢牢地把握獨特性普適性兩個關鍵點。

Cao Lei, deputy general manager of Yunpinhui, said companies need to show their uniqueness and universality.

所謂獨特性,就是菜品的靈魂,即風味和品質不能丟。在預制菜產品打造中,不僅要保留好云南風味,還要發揮好云南優質食材的優勢。

Uniqueness means the soul of dishes cannot be lost, that is, the flavor and quality should be fine. In preparing the Yunnan dishes, we need to keep local flavor, giving full play to the quality of Yunnan ingredients.

所謂普適性,就是要把握不同群體的飲食偏好,對產品進行口味普適性的改良,讓云菜具備大眾消費的可能性。

Universality is to grasp preferences of different diners, so that Yunnan dishes could be improved to maximize the volume of consumers.

“用健康食材做消費者最喜歡的美食,通過預制菜等快消品推廣云南傳統美食,通過健康食材解決方案將云南優質食材帶進千家萬戶,通過特色產品帶動云南農副產品的銷售,從而探索出一條具有云南特色的‘云品出滇’新模式。”

"Using our organic ingredients, Yunnan cooking traditions and the trend of pre-cooked dishes, we can bring Yunnan green foods onto dinner tables home and abroad, while enriching local vegetable farmers,” Cao said. “This is a possible new way for Yunnan specialties to go global."
